Ingredients

  • 1 cup shredded rotisserie chicken
  • 1 stalk celery, diced
  • 1/2 of a red onion, diced small
  • 2 tablespoons low-fat mayo
  • Juice of 1/2 lemon
  • 1/2 tablespoon garlic powder
  • Dash of black pepper
  • 1 cup of mixed salad greens

Instructions

  1. Place all ingredients in a bowl, tossing to combine.
  2. Place salad greens in a bowl and top with the mixture. You can use extra celery stalks and carrots for an extra serving of veggies!
