1. Slice pineapple into triangles that are 1/2 inch thick. Place each slice on a lollipop stick or toothpick.
2. In a bowl, melt chocolate in the microwave at 30-second intervals, stirring in between.
3. Coat each pineapple piece halfway with chocolate and lay on baking sheet lined with parchment paper. Sprinkle with coconut.
4. Allow the pops to set in the refrigerator for 15-20 minutes and serve!
