Corn and Black Bean Salad
Ingredients
SALAD
1 can of corn, drained and rinsed (or a 10-oz. bag of frozen corn, thawed)
1 small red onion, finely chopped
2 - 3 cloves garlic, crushed and finely minced
1 can of black beans, drained and rinsed
1 bell pepper, small diced
1 cup fresh cilantro, chopped
VINAIGRETTE
Zest and juice of 2 limes
1/4 cup canola oil
1 tsp. honey
2 - 3 tsp. ground cumin
1/4 tsp. black pepper
1/2 tsp. salt
Instructions
In a mixing bowl, combine corn kernels, onion, garlic,
beans, bell pepper and cilantro. Set aside.
In a small bowl, whisk together lime juice and zest, canola
oil, honey, cumin, salt and pepper.
Pour vinaigrette over salad, stir to combine and serve.
