Corn and Black Bean Salad

Ingredients

  • SALAD
  • 1 can of corn, drained and rinsed (or a 10-oz. bag of frozen corn, thawed)
  • 1 small red onion, finely chopped
  • 2 - 3 cloves garlic, crushed and finely minced
  • 1 can of black beans, drained and rinsed
  • 1 bell pepper, small diced
  • 1 cup fresh cilantro, chopped
  • VINAIGRETTE
  • Zest and juice of 2 limes
  • 1/4 cup canola oil
  • 1 tsp. honey
  • 2 - 3 tsp. ground cumin
  • 1/4 tsp. black pepper
  • 1/2 tsp. salt

Instructions

  1. In a mixing bowl, combine corn kernels, onion, garlic,
    beans, bell pepper and cilantro. Set aside.
  2. In a small bowl, whisk together lime juice and zest, canola
    oil, honey, cumin, salt and pepper.
  3. Pour vinaigrette over salad, stir to combine and serve.
