1. Preheat oven to 350°F.
2. Spray muffin tin generously with nonstick spray.
3. In a medium bowl, whisk together eggs, salt and pepper.
4. Add about 1 tbsp. of greens, tomatoes, bacon and a sprinkle of cheese to each muffin slot.
5. Pour egg mixture into each slot, leaving a little room at the top.
6. Bake for 20 minutes. If the tops are not fully cooked cook in 3-minute intervals until they firm up.
