Ingredients

  • 1 large Zucchini, cut into ½ inch cubes
  • 1 large ripe avocado, cubed
  • 1/4 cup coarsely chopped fresh cilantro
  • 1/4 cup finely chopped onion
  • 2 cloves garlic, minced
  • 2 tablespoons lime juice
  • 1/2 tablespoon hot sauce
  • 1/4 teaspoon salt

Instructions

  1. Place zucchini in a microwave-safe dish, cover with damp paper towel and microwave on High until tender, usually 4-5 minutes. Strain, pressing lightly on the zucchini to extract any liquid.
  2. Transfer zucchini into a large bowl; add avocado, cilantro, onion, garlic, lime juice, hot sauce and salt. Coarsely mash until combined.
