Ingredients

SALAD INGREDIENTS

  • ½ cup mixed greens
  • ¼ cup summer squash
  • ½ cup butternut squash
  • ¼ cup cooked quinoa
  • ¼ cup black beans
  • 1 cup cherry tomatoes
  • 1 Tbsp. shelled pumpkin seeds (toasted)
  • 1 Tbsp. dried cranberries
  • ¼ cup frozen corn (roasted)
  • ¼ cup micro greens

VINAIGRETTE INGREDIENTS:

  • 1 cup dried cranberries
  • ¼ cup red wine vinegar
  • 1 cup olive oil
  • 1 cup orange juice
  • 1 Tbsp. honey
  • 1 Tbsp. lime juice
  • 1 Tbsp. minced garlic
  • 1 Tbsp. shallot (chopped)
  • 1 tsp. ground cumin

Instructions

  • Combine all salad ingredients in a large bowl.
  • Add your vinaigrette ingredients minus the olive oil to a food processor and puree until thoroughly blended.
  • Add olive oil and emulsify.
  • Drizzle the vinaigrette over your salad and toss, then enjoy!
