Asparagus with Lemon and Garlic

  • 1 pound of asparagus
  • 2 tablespoons olive oil
  • 2 garlic cloves, minced
  • 3 tablespoons low fat Parmesan cheese
  • Juice of one lemon
  • Salt and pepper, to taste


  1. Preheat oven to 400°. Arrange asparagus in a single layer on a baking sheet.
  2. Toss in olive oil and sprinkle with a little salt and pepper.
  3. Roast in the oven for 8-10 minutes. Asparagus should be crisp on the outside and tender in the center.
  4. Toss in garlic, Parmesan and lemon juice. Serve immediately.
