Ingredients

  • SALAD:
  • 2 medium heads of broccoli, chopped (with stalks discarded)
  • 1 bunch green onion, chopped
  • 1/3 cup roasted pumpkin seeds or nuts of your choice
  • 1/3 cup dried cranberries or raisins
  • DRESSING:
  • 1/2 cup low fat plain yogurt
  • 2 tbsp. olive or canola oil
  • 1 1/2 tbsp. apple cider or white vinegar
  • 1 tbsp. honey
  • 1/2 tsp. salt
  • 1/4 to 1/2 tsp. ground black pepper

Instructions

  1. Place the chopped broccoli, onion, seeds and dried fruit in a large mixing bowl.
  2. In a small bowl, whisk together the yogurt, oil, vinegar, honey, salt and pepper until smooth.
  3. Pour the dressing over the broccoli mixture and toss well until everything is coated. Allow the mixture to sit for about 20
    minutes so the flavors can fully develop.
