Oven Mitt Easy Oven Mitt Medium Oven Mitt Hard

Ingredients

  • 1 cup onion, diced
  • 1 Tbsp. garlic, minced
  • 1 lb. chicken breasts
  • 1 4-oz. can diced green chiles
  • 1 cup chicken broth, unsalted
  • 1/2 Tbsp. paprika
  • 1/4 tsp. pepper
  • 2 Tbsp. taco seasoning
  • 1 13.4-oz. can cannellini beans, rinsed + drained
  • 1 cup frozen corn

Instructions

  1. Lay chicken breasts along the bottom of the slow cooker.
  2.  Cover chicken with onions, garlic, green chiles, broth and spices.
  3. Cover and cook on low for 6 hours.
  4. After 6 hours, remove chicken breasts and use two forks to shred. Stir the shredded chicken back in with the other ingredients.
  5. Add cannellini beans and frozen corn and allow the mixture to sit for 10-20 minutes.
  6. Garnish with avocado or guacamole and enjoy!
