Chicken Kabob With Vegetables

  • 1 pound boneless skinless chicken breasts, cut into 1/5-inch pieces
  • 1 medium red bell pepper, cut into 1-inch pieces
  • 1 medium zucchini or yellow summer squash cut into 1-inch pieces
  • 1 medium red onion cut into wedges
  • 1/4 crumbled feta cheese


  1. Preheat your oven or grill to high (350 degrees F for the oven).
  2. Thread 4 pieces of chicken on 1 skewer; use as many skewers as necessary until all of the chicken is used.
  3. Thread the vegetables on wooden skewers, alternating bell pepper, zucchini/squash and onion wedges.
  4. Cook chicken and veggies on skewers for 5-7 minutes per side, until cooked through. Serve immediately.
