Chickpea Salad
Ingredients
115-oz. can chickpeas
Juice of 1/2 lemon plus 1-2 tsp. zest
3-4 tbsp. hummus or light mayonnaise
1/2 cup small-diced celery
1/2 cup small-diced red onion
1/4 cup sweet or dill pickle relish (optional)
1/2 tsp. garlic powder
1/2 tsp. salt
1/4 tsp. ground black pepper
Dash of cayenne (optional)
8 lettuce leaves (for serving)
Instructions
Drain and rinse chickpeas, place in medium-sized bowl and
mash the chickpeas with the back of a fork until they reach your
desired consistency.
Add remaining ingredients and mix well.
Divide evenly among lettuce leaves to make lettuce wraps
and serve.
