Chickpea Salad

Ingredients

  • 1 15 oz. can chickpeas
  • Juice of 1/2 lemon plus 1-2 tsp. zest
  • 3-4 Tbsp. hummus or light mayonnaise
  • 1/2 cup small-diced celery
  • 1/2 cup small-diced red onion
  • 1/2 tsp. garlic powder
  • 1/2 tsp. salt
  • 1/4 tsp. ground black pepper
  • 8 lettuce leaves (for serving)
  • Dash of cayenne (optional)
  • 1/4 cup sweet or dill pickle relish (optional)

Instructions

  • Drain and rinse chickpeas, place in medium-sized bowl and mash the chickpeas with the back of a fork until they reach your desired consistency.
  • Add remaining ingredients and mix well.
  • Divide evenly among lettuce leaves to make lettuce wraps and serve.

Notes

Substitute whole grain bread for lettuce leaves and top with tomatoes and cucumbers to make sandwiches.
