Chocolate Banana Bread

Equipment

  • Bundt pan

Ingredients

  • 2 cups all-purpose flour
  • 1/2 cup whole-wheat flour
  • 1/2 tsp. salt
  • 1 tsp. baking soda
  • 1 1/2 cups white sugar
  • 1/2 cup cocoa powder
  • 2 eggs
  • 1/2 cup canola oil
  • 2 large bananas (well mashed)
  • 1 cup applesauce
  • 1/2 cup plain low-fat yogurt
  • 1 tsp. vanilla extract
  • 1 cup dark chocolate chips

Instructions

  • Preheat oven to 325°F. Spray a Bundt pan with non-stick cooking spray and set aside.
  • In a large mixing bowl, whisk together the flours, salt, baking soda, sugar and cocoa powder. Set aside.
  • In a medium mixing bowl, whisk together the eggs, oil, bananas, applesauce, yogurt and vanilla.
  • Pour the wet mixture into the dry mixture and fold the ingredients together until mixed. Do not overmix.
  • Gently fold in the chocolate chips and pour the batter into a greased pan.
  • Place the pan in the middle of the oven and bake for about an hour and 15 minutes, or until a toothpick inserted in the center comes out clean.
  • Allow cake to cool for about 15 minutes, then turn out onto a wire cooling rack until completely cool.

Notes

Substitute brown sugar for white to add color and sweetness.
