Chocolate Banana Bread
Ingredients
2 cups all-purpose flour
1/2 cup whole-wheat flour
1/2 tsp. salt
1 tsp. baking soda
1 1/2 cups white sugar
1/2 cup cocoa powder
2 eggs
1/2 cup canola oil
2 large bananas, well mashed
1 cup applesauce
1/2 cup plain low-fat yogurt
1 tsp. vanilla extract
1 cup dark chocolate chips
Instructions
Preheat oven to 325° F. Spray a Bundt pan with non-stick cooking spray and set aside.
In a large mixing bowl, whisk together the flours, salt, baking soda, sugar and cocoa powder. Set aside.
In a medium mixing bowl, whisk together the eggs, oil, bananas, applesauce, yogurt and vanilla.
Pour the wet mixture into the dry mixture and fold the ingredients together until mixed. Do not overmix.
Gently fold in the chocolate chips and pour the batter into a greased pan.
Place the pan in the middle of the oven and bake for about an hour and 15 minutes, or until a toothpick inserted in the center comes out clean.
Allow cake to cool for about 15 minutes, then turn out onto a wire cooling rack until completely cool.
