Corn and Black Bean Salad

Ingredients

SALAD

  • 1 can of corn, drained and rinsed (10 oz. bag of frozen corn, thawed)
  • 1 small red onion, finely chopped
  • 2 - 3 cloves garlic (crushed and finely minced)
  • 1 can of black beans (drained and rinsed)
  • 1 bell pepper (small diced)
  • 1 cup fresh cilantro (chopped)

VINAIGRETTE

  • Zest and juice of 2 limes
  • 1/4 cup canola oil
  • 1 tsp. honey
  • 2-3 tsp. ground cumin
  • 1/4 tsp. black pepper
  • 1/2 tsp. salt

Instructions

  • In a mixing bowl, combine corn kernels, onion, garlic, beans, bell pepper and cilantro. Set aside.
  • In a small bowl, whisk together lime juice and zest, canola oil, honey, cumin, salt and pepper.
  • Pour vinaigrette over salad, stir to combine and serve.

For a great appetizer or fresh snack, serve with low sodium or whole wheat tortilla chips.
