Easy One-Pot Lasagna

  • 1 tablespoon olive oil
  • 2 Italian turkey sausage links, casing removed
  • 28 ounce can crushed or diced tomatoes (or try Shape Your Future 5 Minute tomato sauce)
  • 1-2 teaspoons Italian Seasoning
  • 8 ounces whole wheat bowtie or similar pasta
  • 1 cup shredded low fat mozzarella cheese
  • 1/4 cup freshly grated Parmesan
  • 1 cup skim or low fat ricotta cheese
  • 2 tablespoons chopped fresh parsley leaves
  • Salt to taste
  • Black pepper, ground to taste


  1. Heat olive oil in a large pot over medium-high heat. Add Italian sausage and cook until browned, about 3-5 minutes, making sure to crumble the sausage as it cooks; drain excess fat.
  2. In the same pan, stir in the can of tomatoes or Shape Your FutureĀ 5 minute tomato sauce and Italian seasoning.
  3. Bring the mixture to a simmer, then stir in pasta and 2 cups water. Bring to a boil; cover, reduce heat and simmer until pasta is cooked through, about 13-15 minutes.
  4. Remove from heat. Stir in mozzarella and Parmesan until well combined. Using a spoon, top with dollops of ricotta and cover until heated through, about 2-4 minutes.
  5. Serve immediately, garnished with parsley, if desired.
