Edamame Spinach Sauté

Ingredients

  • 1 Tbsp. canola oil
  • 1 package frozen edamame (10 oz., or lima beans)
  • 1 Tbsp. sesame seeds (optional)
  • 1 bunch green onions (thinly sliced)
  • 1 Tbsp. tahini
  • 2 tsp. low sodium soy sauce
  • 1 lb. fresh spinach (washed)

Instructions

  • Add canola oil to a large sauté pan over medium-high heat. Add edamame, sesame seeds and green onions. Cook for 2 – 3 minutes.
  • Add tahini and soy sauce.
  • Add a couple of handfuls of spinach at a time until wilted. Stir well to coat spinach with sauce.
  • Serve immediately.
