Edamame Spinach Sauté

Edamame Spinach Sauté
Ingredients
1 tbsp. canola oil
1 10-ounce package frozen edamame (or lima beans)
1 tbsp. sesame seeds (optional)
1 bunch green onions, thinly sliced
1 tbsp. tahini
2 tsp. low sodium soy sauce
1 lb. fresh spinach, washed
Fresh lemon (for squeezing)
Instructions
Add canola oil to a large sauté pan over medium-high heat. Add edamame, sesame seeds and green onions. Cook for 2 – 3 minutes.
Add tahini and soy sauce.
Add a couple of handfuls of spinach at a time until wilted. Stir well to coat spinach with sauce.
Serve immediately.
