Edamame Spinach Sauté

  • 1 tbsp. canola oil
  • 1 10-ounce package frozen edamame (or lima beans)
  • 1 tbsp. sesame seeds (optional)
  • 1 bunch green onions, thinly sliced
  • 1 tbsp. tahini
  • 2 tsp. low sodium soy sauce
  • 1 lb. fresh spinach, washed
  • Fresh lemon (for squeezing)


  1. Add canola oil to a large sauté pan over medium-high heat. Add edamame, sesame seeds and green onions. Cook for 2 – 3 minutes.
  2. Add tahini and soy sauce.
  3. Add a couple of handfuls of spinach at a time until wilted. Stir well to coat spinach with sauce.
  4. Serve immediately.
