Oven Mitt Easy Oven Mitt Medium Oven Mitt Hard

Ingredients

  • VEGGIE OPTIONS
  • Yellow squash
  • Zucchini
  • Portabella mushroom
  • Onions
  • Bell pepper (any color)
  • Olive oil
  • Salt and pepper
  • 1 can of beans (black, pinto, cannellini, navy, chickpeas, etc.)
  • Healthy grain of choice (brown rice, barley, quinoa, oats, etc.)
  • WALNUT VINAIGRETTE
  • 1/2 cup walnuts, toasted and chopped
  • 2 ounces regular white vinegar
  • 1 tbsp. Dijon mustard
  • 1 tbsp. honey
  • 1 small shallot, minced or finely chopped
  • 1/2 cup olive oil
  • 1/2 tsp. salt
  • 1/2 tsp. black pepper

Instructions

  1. Slice your choice of veggies into large pieces, then toss with olive oil and a dash of salt and pepper. Roast veggies in oven at 400°F until they start to brown. Flip veggies to brown other side.
  2. Steam grain of choice according to directions.
  3. Whisk together vinegar, mustard, honey and olive oil in a bowl. Then, add chopped walnuts, shallots, salt and pepper.
  4. To serve, combine veggies, grains and beans, then drizzle with vinaigrette.
