Ingredients

  • 1 large Zucchini (cut into ½ inch cubes)
  • 1 large ripe avocado (cubed)
  • 1/4 cup fresh cilantro (coarsely chopped)
  • 1/4 cup finely chopped onion
  • 2 cloves garlic (minced)
  • 2 Tbsp. lime juice
  • 1/2 Tbsp. hot sauce
  • 1/4 tsp. salt

Instructions

  • Place zucchini in a microwave-safe dish, cover with damp paper towel and microwave on High until tender, usually 4-5 minutes. Strain, pressing lightly on the zucchini to extract any liquid.
  • Transfer zucchini into a large bowl; add avocado, cilantro, onion, garlic, lime juice, hot sauce and salt. Coarsely mash until combined.
