Healthy Lasagna Soup

  • 1 1/2 lb. lean ground turkey
  • 1 onion, diced
  • 4-5 garlic cloves, minced
  • 2 tsp. dried Italian seasoning
  • 2 15-oz. jars marinara sauce
  • 4 cups unsalted beef broth
  • 8 oz. lasagna noodles, uncooked and broken
  • 1 cup mozzarella cheese, shredded
  • 1/2 cup parmesan cheese, grated
  • 10 oz. frozen chopped spinach
  • Salt and pepper to taste


  1. Cook turkey, onion and garlic over medium-high heat until no pink remains Drain meat and place in slow cooker.
  2. Add all remaining soup ingredients except pasta and spinach. Cover and cook on low 7-8 hours or high 3-4 hours.
  3. In a separate pot, cook pasta al dente according to package instructions.
  4.  Add cooked pasta and frozen spinach and stir to combine. Cover and cook an additional 10-15 minutes.
  5. Spoon into bowls and enjoy!
