1. In a large saucepan with lid, heat canola oil over medium-high heat. Add two kernels of popcorn and place the lid on the pan.
2. After the two kernels pop, add the remaining kernels and quickly stir. Replace the lid.
3. When the kernels start popping, lift the lid for just a second to release steam, then quickly replace it. Repeat until you no longer hear popping sounds.
4. When the popcorn is done, immediately (but carefully) pour it into a large bowl to avoid burning. Season as desired.
GREAT ADDITIONS/SUBSTITUTIONS
Season with ground cumin and low-salt chili powder, nutritional yeast or yellow curry powder.
For a sweet treat, mix two teaspoons of white sugar and 1/2 teaspoon of cinnamon into the oil before adding the kernels.
