1 can chickpeas (also known as garbanzo beans), drained and rinsed
1/2 cup green or black olives, chopped
4 cups of vegetables of your choice
VINAIGRETTE
Zest and juice of 2 limes
1/4 cup canola oil
1 tsp. honey
2 - 3 tsp. ground cumin
1/4 tsp. black pepper
1/2 tsp. salt
Instructions
1. Combine all salad ingredients in a large mixing bowl. 2. In a small bowl, whisk all vinaigrette ingredients together and set aside. 3. Pour vinaigrette over salad and serve immediately.
