Ingredients

  • 1 Tbsp. green bell pepper
  • 1 Tbsp. onion (chopped)
  • 1 egg
  • 1/2 slice deli turkey (chopped)
  • 1 tsp. water
  • 1 whole wheat English muffin (split and toasted)

Instructions

  • Place peppers and onions in a small bowl. Microwave on high for 30 seconds; stir.
  • Add egg, turkey and water, beat until egg is blended.
  • Microwave on high for 30 seconds; stir. Microwave until egg is almost set, 30 to 45 seconds longer. Season with salt and pepper, if desired.
  • Serve in English muffin.
