Microwave Egg Scrambler

Ingredients

  • 1-2 tablespoons of chopped red or green bell peppers
  • 1 tablespoon chopped onion
  • 1 egg
  • 1/2 slice of deli turkey (chopped)
  • 1 teaspon water
  • 1 whole wheat English muffin (split and toasted)

Instructions

  1. Place peppers and onions in a small bowl. Microwave on high 30 seconds; stir.
  2. Add egg, turkey and water, beat until egg is blended.
  3. Microwave on high for 30 seconds; stir. Microwave until egg is almost set, 30 to 45 seconds longer. Season with salt and pepper, if desired.
  4. Serve in English muffin.
