Pear Cranberry Crumble

Equipment

  • 8-inch baking dish

Ingredients

  • 3 1/2 cups sliced pears
  • 1 cup fresh cranberries
  • 2/3 cup brown sugar (divided)
  • 2 Tbsp. cornstarch
  • 1/2 tsp. ground cinnamon (divided)
  • 1 cup rolled oats
  • 1 cup chopped pecans (almonds, walnuts or a combination of nuts)
  • 1/2 cup almond flour/meal (oat flour)
  • 1/4 cup canola oil
  • 1/4 tsp. salt
  • Nonstick cooking spray
  • Zest and juice of one orange (optional)

Instructions

  • Preheat the oven to 375°F.
  • Spray an 8-inch baking dish with nonstick cooking spray. Add fruit, vanilla, 1/3 cup brown sugar, cornstarch and 1/4 tsp. cinnamon to the dish. Mix well and set aside.
  • In a mixing bowl, use a fork to stir together the remaining 1/3 cup brown sugar, oats, chopped nuts, almond flour, canola oil, remaining cinnamon and salt.
  • Use a fork to break up any chunks of flour. Make sure the oil is distributed evenly.
  • Sprinkle the crumble topping over the fruit.
  • Bake for 30 minutes or until the topping has begun to brown and the fruit is bubbly around the edges.
  • Allow the crumble to cool for about 20 minutes before serving.

Notes

If you don't have fresh cranberries on hand, substitute 1/2 cup dried cranberries.
