Pumpkin Oatmeal Chocolate Chip Cookies
Ingredients
1/3 cup canola oil
1 cup brown sugar
1/2 cup granulated sugar
2 tsp. pumpkin pie spice
1 cup pumpkin puree (not pumpkin pie filling)
1 egg
1 1/2 cups flour
1/2 tsp. baking powder
2 1/2 cups quick oats
1 cup semisweet chocolate chips
Instructions
Preheat oven to 350° F. Line three sheet pans with
parchment paper.
Whisk together the oil, sugars, pumpkin pie spice, pumpkin puree
and egg in a medium mixing bowl until well combined.
Add flour and baking powder and whisk well. Fold in oats and
chocolate chips.
Drop the dough two inches apart on the sheet pans and bake for
16-20 minutes or until edges are golden brown.
Let cool for 10 minutes, and then enjoy!
