Red Curry Sweet Potato Soup

  • 2 Tbsp. olive or canola oil
  • 1 large onion, finely chopped
  • 4-5 cloves garlic, minced
  • 4-6 Tbsp. red curry paste
  • 6 cups water
  • 2 large sweet potatoes, diced (unpeeled)
  • 1 15-oz. can petite diced tomatoes, undrained
  • 1 1/2 cups lentils, rinsed (any color)
  • 2 cups low fat milk
  • Salt and black pepper to taste
  • Chopped cilantro for garnish if desired
  • Lime wedges for serving


  1. Heat oil over medium-high heat in a large pot.
  2. Add onion, reduce heat to medium and cook about 5 minutes or until onion begins to soften.
  3. Add the garlic and red curry paste, cooking for 2-3 minutes. Then, add water, sweet potatoes, tomatoes and lentils.
  4. Bring to a boil, cover partially with a lid and simmer until potatoes and lentils are tender, about 20-25 minutes.
  5. Add milk and heat through.
  6. Season to taste with salt and pepper. Enioy!
