Saucy Stir-Fried Pork

Ingredients

  • 2 cup instant white rice, uncooked
  • 1/4 cup light Italian dressing
  • 1 pound pork tenderloin, cut into thin strips
  • 1 red pepper, cut into thin strips
  • ½ pund sugar snap peas
  • 3 green onions, diagonally sliced
  • 2 tablespoons soy sauce
  • 1 tablespoon cornstarch
  • Teaspoon ground ginger

Instructions

  1. Cook rice as directed on package.
  2. Meanwhile, heat dressing in large skillet on medium-high heat.
  3. Add meat; cook and stir 2 min.
  4. Stir in peppers and peas; cook 3 min., stirring frequently.
  5. Add onions; cook and stir 1 min.
  6. Mix soy sauce, cornstarch and ginger until well blended.
  7. Add to meat mixture; cook 1 min. or until thickened, stirring frequently.
  8. Serve over rice.
