Split Pea Soup

Ingredients

  • 20 oz. dried split peas (green or yellow)
  • 5 cups low-sodium chicken broth
  • 2 cups water
  • 1 meaty ham bone or 2 cups leftover ham
  • 3 celery stalks (diced)
  • 2 large carrots (diced)
  • 1 large onion (diced)
  • 2 cloves garlic (minced)
  • 1 bay leaf
  • 1/2 tsp. black pepper
  • 1/2 tsp. thyme leaves
  • 1 Tbsp. fresh parsley

Instructions

  • Rinse peas and drain well.
  • Combine all ingredients except parsley in a 6-quart slow cooker.
  • Cover and cook on high for 4-5 hours or on low for 8 hours.
  • Discard bay leaf. Stir in parsley and season with salt and pepper to taste.

Love split pea soup. This is a good recipe, I would recommend blending it and adding the meat after.
