Ingredients

  • 20 oz. dried split peas (green or yellow)
  • 5 cups unsalted chicken broth
  • 2 cups water
  • 1 meaty ham bone or 2 cups leftover ham
  • 3 stalks celery, diced
  • 2 large carrots, diced
  • 1 large onion, diced
  • 2 cloves garlic, minced
  • 1 bay leaf
  • 1/2 tsp. black pepper
  • 1/2 tsp. thyme leaves
  • 1 Tbsp. fresh parsley

Instructions

1. Rinse peas and drain well.
2. Combine all ingredients except parsley in a 6-quart slow cooker.
3. Cover and cook on high for 4-5 hours or on low for 8 hours.
4. Discard bay leaf. Stir in parsley and season with salt and pepper to taste.
