Spring Onion Pesto

Ingredients

  • 3 bunches green onion (green tops only)
  • 2 cups spinach (packed tightly)
  • 1 cup walnuts
  • 6 garlic cloves, peeled
  • 3 tbsp. nutritional yeast
  • 1/2 tsp. salt
  • 1/4 tsp. ground black pepper
  • 2 tbsp. olive oil

Instructions

  1. Preheat oven to 400°F.
  2. Add walnuts to a small baking sheet lined with foil. Bake for 5 – 10
    minutes, or until fragrant.
  3. Combine all ingredients in a blender or food processor and
    blend until smooth.
  4. Pour over whole wheat pasta, or use as a dip for our favorite
    veggies.
