Ingredients

Wrap

  • 1 cup sunflower seeds
  • 8 lettuce leaves (for wrapping, try butter, Boston, Bibb, romaine or iceberg)
  • Sliced green onions and chopped cilantro for garnish (optional)

Sauce

  • 1/2 cup peanut butter (natural)
  • 1/3 cup low-sodium soy sauce
  • 2 Tbsp. sesame oil
  • 1/4 cup white vinegar
  • 2 Tbsp. chili paste (like Sambal Oelek or Sriracha)
  • 2 Tbsp. honey
  • 1 Tbsp. ginger (grated or finely chopped)
  • 1-2 cloves garlic (smashed and finely minced)

Instructions

  • In a small bowl, combine sauce ingredients with a fork. Set aside.
  • Heat a medium sauté pan or skillet over medium heat. Add sunflower seeds and stir frequently until seeds begin to turn golden.
  • Pour sauce over sunflower seeds. Stir and heat through.
  • Divide seeds between lettuce leaves. Garnish with green onions and cilantro.

Notes

GREAT ADDITIONS/SUBSTITUTIONS
Try topping the wraps with shredded carrots to add a crunch.
