1. In a small bowl, combine sauce ingredients with a fork. Set aside.
2. Heat a medium sauté pan or skillet over medium heat. Add sunflower seeds and stir frequently until seeds begin to turn golden.
3. Pour sauce over sunflower seeds. Stir and heat through.
4. Divide seeds between lettuce leaves. Garnish with green onions and cilantro.
