1. Cook pasta as directed on package. Rinse with cold water and drain.
2. In a large bowl, combine cooked pasta, beans, parsley and your choice of chopped vegetables. Toss well.
3. Whisk together vinaigrette ingredients in a separate bowl.
4. Add vinaigrette to salad. Stir until ingredients are evenly coated.
Serve immediately or store in the refrigerator for up to a week.
For additional toppings, try sliced olives, capers or roasted peppers, etc.
FYI: This recipe makes a large batch. It’s the perfect healthy side to bring to a gathering!
