BBQ Pulled Chicken Sliders & Green Beans

Ingredients

  • 2 cups shredded rotisserie chicken
  • 8 whole wheat slider mini buns
  • 8 bread and butter pickles
  • 1/2 cupe BBQ sauce
  • 2 cups of water
  • 1 1/2 pounds green beans, trimmed
  • 1 1/2 tablespoons olive oil
  • 1 1/2 tablespoons butter
  • 1 garlic clove, minced
  • 2 tablespoons lemon juice
  • Dash of salt
  • Dash of pepper

Instructions

BBQ Pulled Chicken Sliders

1. Combine chicken and BBQ sauce in a small bowl.
2. Spoon 3 tablespoons of the chicken mixture on the bottom half of each bun. Top each with a few pickle chips and top with bun.

Green Beans

1. Boil water in a large skillet. Add the beans, cover and simmer on low heat for about 8 minutes. Drain beans and pat dry.
2. Heat oil and butter in pan. Add garlic and sauté for 30 seconds.
3. Add beans, lemon juice, salt, and pepper. Cook for 2 minutes (or until hot).
4. Serve!
