Green Goddess Dip
Ingredients
2 cups raw cashews
3/4 cup water
1/4 cup lime or lemon juice
1/2 tsp. salt
1 bunch fresh cilantro, stems removed
1 bunch parsley, stems removed
2–4 green onions
1/4 cup fresh dill
1/4 cup fresh tarragon (optional)
Instructions
Place
cashews
in a small saucepan and add enough water to cover. Bring to a boil, remove from heat and let sit for 10 minutes. Drain.
Add soaked cashews, 3/4 cup water and remaining ingredients to a high-powered blender.
Blend until creamy.
