Ingredients

  • 2 cups raw cashews
  • 3/4 cup water
  • 1/4 cup lime or lemon juice
  • 1/2 tsp. salt
  • 1 bunch fresh cilantro, stems removed
  • 1 bunch parsley, stems removed
  • 2–4 green onions
  • 1/4 cup fresh dill
  • 1/4 cup fresh tarragon (optional)

Instructions

  1. Place cashews in a small saucepan and add enough water to cover. Bring to a boil, remove from heat and let sit for 10 minutes. Drain.
  2. Add soaked cashews, 3/4 cup water and remaining ingredients to a high-powered blender.
  3. Blend until creamy.
