Roasted Veggie Salad

  • 1/4 cup summer squash
  • 1/4 red or green (or both!) bell pepper
  • 2 Tablespoons Balsamic Vinaigrette
  • Spring mix greens


  1. Roast veggies in the oven at 350 degrees for 10-12 minutes or until cooked as desired. *You may also want to saute in a small pan over medium heat.
  2. Mix all ingredients in a bowl or plastic dish.
  3. Add dressing and enjoy at home or on-the-go!
