Romaine Salad with Red Wine Vinaigrette

Ingredients

  • 3 tablespoons red wine vinegar
  • 2 tablespoons olive oil
  • 1 tablespoon minced shallots
  • 1 tablespoon chopped fresh parsley
  • 1 teaspoon Dijon mustard
  • 1/8 teaspoon salt
  • 1/4 teaspoon freshly ground black pepper
  • 1 garlic clove, crushed
  • 6 cups chopped romaine lettuce
  • 1/4 cup dried cherries, chopped
  • 1/2 tablespoon crumbled feta cheese

Instructions

  1. Combine first 8 ingredients in a large bowl; stir well with a whisk.
  2. Add lettuce, dried cherries, and cheese; toss gently to coat.
